Tell us a bit about yourself
My story begins in 1981, at the early age of 14 when I desperately wanted to have and ride a motorbike like most of my classmates did, so my father supported me in finding a weekend job, and work for it, (he believed I would understand the value of money and whatever I would buy with it, if I had worked hard for something I wanted so much) so I found a job in the most famous restaurant of my city (weekends and during my school summer holidays) to finally fulfil my dream.
From that day on I became so fascinated by food but mostly by the feelings that we could convey to our customers with our dishes, which I had never thought possible.
The passion for food then grew always more in the years to come; I felt the need to learn more about our traditions, ancient recipes and techniques and mostly about our local ingredients, which in those days were strictly seasonal, so only available in short periods of the year.
My career since then has taken me around the world, and this probably is one of the most beautiful aspects of our work being able to learn and travel at the same time.
I’ve arrived in Thailand in 2006 after working on cruise ships for 3 years; I needed to place the anchor somewhere and Thailand became my first choice for its rich culture, amazing food and lovely people. From that day, 12 years have passed where I was lucky enough to work with amazing people that has helped create that special bond with the country and make it my second home. In all these years I was lucky to work for major hotel companies both local and international and travel for that the country all around and experience customs and traditions of different parts of the country.
What is your favourite comfort food?
My preferred comfort food is Pasta and a simple spaghetti with tomato and basil sauce is among my favourite.

AVANI’s Honest Food brand statement is in line with what I have always believed, been committed and pursue throughout my career, searching always for the best local and sustainable ingredients. Local ingredients, organic farmed vegetables and fruits that enrich the flavours of our locally inspired cuisine.
What is the must try dish at AVANI Hua Hin Resort & Villas?
Our Thai food such as Phad Thai, and Curries are among Guests favourite, but new dishes in our specialty restaurant on the beach side like Pici alla Chiantigiana (an ancient Tuscan pasta recipe).
