- 1⁄4 c baby corn, thinly sliced
- 1 carrot, cut julienne
- 1 red pepper, cut julienne
- 1⁄2 c red cabbage, thinly sliced
- 1 courgette (zucchini), sliced into "noodles" in a spiral slicer
- 1⁄4 c sugarsnap peas, thinly sliced
- 1 spring onion (green onion), sliced thin
- 2 tbsp lime juice
- 2 tbsp tamari or nama shoyu
- 1 shallot, sliced thin
- 1 small red chili, minced
Almond Sauce
- 3 tbsp peanut butter
